Fiberlicious Peanut Butter Cookies
1/2 cup vegan buttery spread
2 tablespoons flax oil
1/2 cup sugar
1/2 cup brown sugar
3/4 cup Peanut butter
1 tablespoon vanilla
1 cup flour
1/2 cup Oats
1/4 cup wheat bran
1/4 cup wheat germ
2 tablespoons baking soda
Preheat Oven to 375 Fahrenheit.
Combine vegan buttery spread, flax oil and sugars. Mix until well-blended. Add peanut butter and vanilla, and mix until smooth.
In another bowl, mix all dry ingredients, then add them to the wet mixture and blend well.
Roll into balls about the size of ping pong balls. Then, make cross marks on the top with a fork (I let my 6 yr. old daughter do this!!)
Bake for 10 minutes.
Enjoy with a cold glass of soy milk or a hot cup of tea!
