Fish Sticks and Tarter Sauce

What you need: 

Tarter Sauce:
1 1/2 cups vegan mayo
4 tablespoons sweet relish
1/2 tablespoon onion powder
1/2 tablespoon garlic powder
1 tablespoon vinegar Tofu and coating:
1 pound extra firm tofu, pressed for about 15 minutes and sliced 3/4" thick
oil, as needed
1/2 cup flour (or as needed)
1 cup plain vegan yogurt
3 cups panko bread crumbs

Rub:
1/4 lime, juiced
1 teaspoon cumin
2 teaspoons vegetable oil
1/4 teaspoon salt
1 teaspoon kelp granules, optional

What you do: 

1. Make tarter sauce by mixing the tarter sauce ingredients together. Refrigerate so it will thicken a bit. Cut each tofu slice into 3/4" strips to make "fish stick" shaped pieces.
2. Set deep fryer to 365 degrees Fahrenheit. Alternatively, if you will be frying them in a pan, place oil in the pan and heat. Prepare tofu. First, mix together the rub ingredients in one bowl and coat the tofu with the rub mixture.
3. For the coating, put flour, yogurt, and panko crumbs into 3 separate bowls. Now you're ready to make your fish sticks (this will be a bit messy). Coat tofu by dipping tofu pieces in flour then yogurt then panko bread crumbs (I used tongs which made the coating process a bit easier for me). Make sure the bread crumbs are firmly pressed into the tofu.
4. Drop the tofu pieces into the fryer about 6 at a time (I do this to prevent food from sticking to the metal basket) and deep fry for about 5 minutes or until the coating looks good.
Kinda a lot of work, but so worth it! You could also make fish tacos with the this recipe!

I loved the lime flavor of this! I used the rub (including optional ingregient) and tarter sauce recipe. For the batter, I used only Lousiana brand fish batter (blue box). The texture of the "fish" was not the same of course. I found when I cubed the tofu into small pieces then batter and fried it the texture was less noticable. I loved the tarter sauce. This was perfect for the big catfish dinner we had with our friends. I didn't feel left out. Of course, they had to try my version of "fish". They were surprised by the great flavor. I made this last night.  I marinated my tofu in soy sauce, onion powder, garlic powder and some vegan chicken broth powder rather than putting the rub on it.  The breading tasted a lot like fish sticks but the tofu didn't, but it was still really good (and at least it didn't taste like tofu after it was marinated lol).  Thanks for the recipe we really liked it.  :)
