Flashback Mac and Cheese

What you need: 

1 pound macaroni
1 cup water
1 cup unsweetened nondairy milk
3 tablespoons mild-tasting oil (such as corn oil)
1/2 cup flour (I use all-purpose)
3/4 cup nutritional yeast
1 teaspoon salt
1/4 teaspoon onion powder
1/4 teaspoon garlic powder

What you do: 

1. Cook macaroni (or other shaped pasta) according to package directions. While your mac is cooking, let's make the special secret "cheese" sauce.
2. In a bowl or large measuring cup, combine the water, milk, and oil and whisk briefly. In another bowl, combine all of the dry ingredients together.
3. Heat a medium saucepan. Add the dry ingredients to the saucepan, and slowly add the wet ingredients, continuously whisking over medium heat. Once all of the ingredients are incorporated, turn up the heat until the mixture begins to bubble and thicken.
4. Keep whisking as the mixture thickens and bubbles; do this for 1-2 minutes, and then turn the heat down. Keep whisking. After a spell, your "cheese" sauce should be nice and thick. Turn the heat off, and cover your saucepan.
5. Drain pasta well when done, and return noodles to the pot. Add all of your "cheese" sauce to the noodles, and stir well.
If, after your first trepidacious couple of forkfuls, you find that this recipe doesn't beat the pants off of the dairy mac and cheese with which most of us are familiar, you must have done something wrong. Come over to my house. I'll show you how it's done.

;)b  Making this for a quick lunch. I just finished the sauce and I am waiting on the macaroni to get done.  The sauce is AWESOME. It's a little bland (my food has to be spicy), but I'm sure I can punch it up with a little seasoning. It reminds me so much of the kraft macaroni and cheese from my childhood.  BTW, I'm wishing I had cooked some broccoli to go with it. Thanks for the awesome receipe!

I am probably the worst person ever to rate this...I have only been vegan for 5 days...I am a mac n' cheese o holic...apparently I'm not any more =( 

I have been vegan for just about a year now. It is very difficult giving up cheese (I was vegetarian for about eight years and cheese was a staple!) To me, vegan cheeses that weren't so great at first, are better tasting after your taste buds have had some time to adjust. It's like giving up anything; sugar, chocolate, meat, etc. But if I were to recommend a great recipe, albeit not mac and cheese as we all remember and love, try the "best mac and cheese in the world, seriously" recipe. It is creamy and satisfying.
As for the flashback mac and cheese, I haven't tried it yet. But you might be surprised at how much you appreciate it later, once real cheese is long gone. Also, as far as kids are concerned, it might be best to tell the kids they are eating a creamy pasta, so they don't have any preconceived ideas that it should be cheesy. Daiya is by far the best vegan cheese but for some it might be hard to come by. Don't lose hope. I've made vegan mac and cheese for my kids that they loved. . . I didn't follow a recipe.

Being vegan is not that hard if you cook for yourself a lot. It will come easier real soon. Just try some other mac and cheese recipes.

I am probably the worst person ever to rate this...I have only been vegan for 5 days...I am a mac n' cheese o holic...apparently I'm not any more =( 

I was scared to try this from the start.  I love the fattening mac n' cheese that is full of butter and cream and cheddar cheese...but I decided to go vegan so i figured I'd try and find a replacement.

Honestly, I thought this was pretty bad.  I followed the recipe EXACTLY word for word.  Once it was done, it looked pretty!  It looked wonderful.  The sauce had a beautiful consistency and color.  Evil mommy that I am, I tried it on the kids first...that didn't go well.  So I tried the dog second...she sniffed it but would not eat it...then I tried it and understood why.

I ended up dumping mayo and a butt load of cheese in it to make it edible enough for the kids to eat.  Even then, after about half a bowl, they didn't want it.  So it went in the trash *sobs* I hate throwing away food!  I had no clue how to make it taste good though =(

I guess that me going vegan is going to mean no more cheese...are any of the fake cheeses any good?

My first experiment with a mac & "cheese" dish was very very good and tasted pretty close to the real thing (surprisingly). I definitely needed more salt but just added it in the bowl. Also threw on some whole wheat bread crumbs which added a little more salt and some good texture. I used whole wheat macaroni & flour. Really delicious. Might try adding some mustard for color and extra flavor next time.

I've looked through a lot of recipes and chose this one because it was simple and didn't use too many ingredients. I couldn't believe how quickly I was finished with this recipe and I didn't feel like I used too many dishes to make it (always a plus). This is a great dish to make in a pinch when you're low on ingredients and want to make something quick, easy, and comforting.

I found this very good :) The best home made vegan man and cheeze I have made. (I have only made one other...) I did add about a quarter cup of veggie broth powder and I used whole wheat flour instead.... Which I bet it would be even better if I used all purpose. Oh, and I used whole wheat noodles to. Well done

SUPER TASTY! great recipe, we always made the "best mac n cheese, seriously" recipe, but this one was just as tasty and we didn't have to wait for it to bake. thanks for sharing

i love this sooo much!!! I only use 1 tbspoon of oil though just because i'm watching the calories. i'm thinking i can use the cheese sauce for other things such as pizza... mmMmmMm
