Flashback Mac and Cheese

What you need: 

1 pound macaroni
1 cup water
1 cup unsweetened nondairy milk
3 tablespoons mild-tasting oil (such as corn oil)
1/2 cup flour (I use all-purpose)
3/4 cup nutritional yeast
1 teaspoon salt
1/4 teaspoon onion powder
1/4 teaspoon garlic powder

What you do: 

1. Cook macaroni (or other shaped pasta) according to package directions. While your mac is cooking, let's make the special secret "cheese" sauce.
2. In a bowl or large measuring cup, combine the water, milk, and oil and whisk briefly. In another bowl, combine all of the dry ingredients together.
3. Heat a medium saucepan. Add the dry ingredients to the saucepan, and slowly add the wet ingredients, continuously whisking over medium heat. Once all of the ingredients are incorporated, turn up the heat until the mixture begins to bubble and thicken.
4. Keep whisking as the mixture thickens and bubbles; do this for 1-2 minutes, and then turn the heat down. Keep whisking. After a spell, your "cheese" sauce should be nice and thick. Turn the heat off, and cover your saucepan.
5. Drain pasta well when done, and return noodles to the pot. Add all of your "cheese" sauce to the noodles, and stir well.
If, after your first trepidacious couple of forkfuls, you find that this recipe doesn't beat the pants off of the dairy mac and cheese with which most of us are familiar, you must have done something wrong. Come over to my house. I'll show you how it's done.

i must've done something very wrong. because this didn't taste anything like mac 'n cheese.
it must've been the vanilla soymilk i used.
hahaha!
maybe i'll try again someday.

This was really good!!!  I used whole wheat flour and pasta and instead of 3 tbsp of oil I used 1 1/2 tbsp veg butter.  It turned out as well as could be expected.  Recipe was great but my execution was a little off...  I got a lot of the sauce stuck to the pot...

I really like the creaminess of this mac 'n' cheese. I felt the nutritional yeast overpowered it just a teeny tiny bit, so I just added a couple more shakes of garlic powder and a splash more almond milk and it's totally delicious! Finally, a macaroni recipe I can eat!

Wow!  I tried the 'Best Vegan Mac and Cheese in the World...Seriously' recipe from here, and it was really good as well, but a different taste altogether in my opinion.  Not to mention, no tofu, and a lot less ingridents, and no time in the oven after all the prep.

This is my new fav recipe for veg mac n cheese.  I really needed something quick tonight and this did the trick!

I made this for my mom and me for Christmas dinner and the omnis ended up eating most of it. Went back for seconds and all. I LOVE this recipe. I just wish that it didn't dry up so quickly.

If you add a little soymilk to this and reheat it on the stove, it gets really creamy again, not dry at all.  I've even added a bit of soymilk and reheated in the microwave when I take leftovers for work, and it comes out great.

Mmm, I just used the leftover sauce in some beans and rice! Very good addition to a wonderful staple.

this seems like it would be really tasty! ( i mean there are TONS of good reviews! ) i think i might make it soon, by the way is this sauce good on other things? ( nachos, etc.)

I agree with the last poster... This sauce is absolutely amazing!  I use it for nachos, which my real-cheese-eating fiance LOVES, and for pasta bakes, and as a dipping cheese for bread, soy-pigs in blankets, etc.  It's an awesome cheese sauce.  I usually use vegan margarine instead of the oil, makes it creamier, but it's good either way.  Definitely try it!
