Flax Potato Soup

What you need: 

6-10 small russet potatoes
2-2 1/2 cup of plain soy milk
1-1/2 cup of margarine of choice
1 cup fortified flax seeds
salt and pepper to taste

What you do: 

I'm sorry if the measurements are off I don't measure anything I just put a amount until it tastes good.
First, wash the potatoes peal then wash again cutting away any bruises or bad spots. Then, cut the potatoes into small half inch cubes. After you finish put them in a big pot. The main trick to boiling potatoes is just to put enough water in the pot so the potatoes are barley covered. Set the stove for medium heat and wait about 15-20 minutes. (a good way to check to see if they are done is if you can't pick up the potatoes with a fork they are done.)
Once the potatoes are done boiling drain 2/3 of the water into your sink. Bring the pot back to the stove and mash the potatoes until there are no lumps. Add the soy milk, margarine and flax and return to medium heat until the soup boils.
