Flaxseed Pancakes

What you need: 

6 tablespoons flaxseed
1 egg substitute
1/2 cup nondairy milk
1/2 cup water
1 cup flour-all purpose
2 teaspoon baking powder
wild blueberries

What you do: 

1) Combine flaxseed, egg substitute, nondairy milk and water. Separately mix flour and baking powder.
2) Mix the dry ingredients with the rest just to dampen the flour. Batter will be very thick. Add blueberries.
3) Scoop in generous tablespoon onto preheated-400 degree Fahrenheit grill. when edges of top of pancakes are dry flip, then flatten.

SO HOW'D IT GO?

These pancakes were extremely easy to make. I used frozen blueberries as I had those on hand and it worked perfectly. I can see that they would work with any addition, chocolate chips, other fruit, etc. It took longer to cook them than say, pancake mix, but they were very light and fluffy. Delicious with maple syrup - no doubt this will be a family favourite.

omg! i completely love these! theyre even better with 1/4 c walnuts andd 1/2 c choc chips mixed in,you should try it w/them. ^_^
