Fluffy Coconut Walnut Pancakes

What you need: 

3/4 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
1/3 cup shredded coconut (I use sweetened)
1/4 cup walnuts, chopped
1 1/8 cups nondairy milk (I use vanilla soy milk)

What you do: 

1. In a medium sized bowl, mix the flour, baking powder, salt, coconut, and walnuts.
2. Pour milk into flour mixture and gently stir together until just mixed.
3. Pour batter into a hot, nonstick pan on medium heat and let sit until the center starts to bubble and become sturdy.
4. Flip pancake over and cook other side until golden brown. Repeat until batter is gone.
Can make 2 large or 4 small pancakes.

SO HOW'D IT GO?

This was really good. I made a double batch with unsweetened coconut (no sugar added either) and chocolate chips instead of the walnuts (had none and was craving chocolate). Turned out very yummy. Thanks. :)>>>
