Focaccia Bread with Rosemary

What you need: 

Dough:
1/2 teaspoon dry yeast
1 cup lukewarm water, divided
3 tablespoons olive oil
1/2 teaspoon sea salt
2 cups spelt, whole wheat or unbleached wheat flour Topping:
2 tablespoons olive oil
1 tablespoon crushed fresh rosemary leaves
1 teaspoon coarse sea salt

What you do: 

1. Place yeast in a bowl with 1/2 cup of the lukewarm water and stir until dissolved. Add remaining water, oil, salt and flour and mix well. Cover bowl and let rise in warm place until doubled in size.
2. Oil 1 9" cake pan. Knead dough on floured surface, adding more flour if needed to make a shiny and elastic dough.
3. Place dough in prepared pan. Press dough into pan and let rise again for at least 1/2 hour. Preheat oven to 425 degrees F. Mix topping ingredients.
4. When risen, make many deep holes in dough with finger and brush on topping. Bake for 20-30 minutes.'

Plan on tying this within the next few days, my challange is making it gluten free. Of all the recipes ive seen this one looks like it will convert the best. But i am a bit of a failure at traditional gluten free breads. Sweet breads, muffins, cookies, ect... i can do but plain breads tend to be a flop so i hope this defies the trend!

This was awesome! I used mostly whole wheat flour, pink salt, and I didn't have fresh rosemary so I used a little powdered rosemary plus garlic granules, which worked out great. I baked it on a baking sheet instead of in a round pan, which I recommend so that you can spread it out more. Next time I'll make it with the fresh rosemary like it's supposed to have. I'm thinking that lots of olive oil = delicious bread. Yum yum yum.

Delicious. I will make this again. I had only unbleached white flour, but next time I will try with half whole wheat flour.

That is a very successful bread recipe you have ever done in baking a bread recipe. However, I will try to bake it once when I have a rest day, so I can he testify to myself how delicious these successful bread recipes.

This is a good bread. It's not like regular focaccia (at least mine didn't turn out that way), in that it is a bit more like a loaf bread. I used whole wheat pastry flour, and had to add more than 2 cups, but ended up adding too much more...so I had to add more oil and water! The dough came out pretty nicely though. I suggest adding some rosemary (or something) to the actual dough..b/c I think it would be better. I did a topping with oil, rosemary, and diced red onion, and it's very nice. I forgot to add coarse salt until after baking, so that (before-hand) would have made it better. We enjoy this as a bread, though.

GREAT recipe. the dough came together very well.

i like a lot of toppings so i make my focaccia almost like pizzaa adding tomato, onion, black olives and rosemary for thyme.  ^-^

This recipe is always a crowd pleaser.  I always have to use 3 cups whole spelt, instead of 2, to get the dough the right consistency.

This is a great recipe!!! I've made it atleast 10 times and it goes quickly every time. I've also subbed half of the flour serving with whole wheat flour and it turned out good as well...
