Forks High Genius Stir-fry
2 cloves garlic
1 tablespoon chopped ginger
6 tablespoons thick, sweet soy sauce
2 tablespoons light soy sauce
3 tablespoons rice wine vinegar
1 tablespoon sesame oil
4 tablespoons sweet chili sauce
2 tablespoons chopped basil
tofu - firm, cut into small chunks
capsicum - red
Asian greens - snow peas, beans, bok choy, fresh spinach, etc
other stir-fry veggies that take your fancy
Mix garlic, ginger, both soy sauces, rice wine vinegar, sesame oil, sweet chili and basil together. Add tofu to the sauce and leave to marinate for 15 minutes.
Use slotted spoon to drain the tofu, but keep the sauce for later.
Fry tofu in small amount of olive or veg oil until browned. Remove from pan.
Quickly stir-fry the other vegetables. When cooked, add the tofu and sauce and stir until heated. You can even add some cashew nuts at this point if you like.
Serve on white or brown rice for quick, delicious and nutritious meal. Hold your forks high!
