French Potato Salad

What you need: 

2 pounds baby red potatoes, scrubbed
1/3 cup olive oil
1/4 cup red wine vinegar
2 tablespoons capers (OPTIONAL! Only add if you know that you really like them.)
2 tablespoons chopped fresh oregano
1 1/2 tablespoons brown mustard
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/8 teaspoon hot pepper sauce
1/2 small red onion, peeled and thinly sliced

What you do: 

Cook potatoes in boiling salted water until tender, about 12 minutes. Drain and set aside.
Whisk together oil, vinegar, capers, oregano, mustard, salt, pepper and hot pepper sauce. Set aside.
In a large bowl, combine potatoes and onion. Pour dressing over top and toss gently to combine.
Serve chilled or at room temperature.

SO HOW'D IT GO?

They have a clean, but very strong, vinegar flavor.  The bite of a salt and vinegar chip x10.  Really unlike anything else I have ever had.  If you know of a grocery store with an olive bar, like Whole Foods, you may be able to get a sample.   

Thanks. I LOVE salt & vinegar chips, so maybe I'd like capers afterall. I'll take your advice and check out Whole Foods next time we're in the vicinity. :)

PS--I didn't have capers so I didn't add them, and while I like them I'm not sure that this recipe even needs it.

Wow, this is absolutely amazing! My mom's potato salad marinated it in vinagrette too... but then she gooped it up with mayo. This is delicious and (comparatively) quite light, but still reminded me of the best parts of hers.

I used dried oregano and white onions since that's what I had. At first the dressing with the dried oregano made the dressing seem a bit bitter but once I let everything sit and blend it was wonderful! Also I usually don't like raw onions in things but they were perfect in this.

I will definitely make this for any picnics that come up this summer!

Great recipe.  I brought this to a Memorial Day cookout and even all the meat-eaters loved it.
