French Potato Salad

What you need: 

2 pounds baby red potatoes, scrubbed
1/3 cup olive oil
1/4 cup red wine vinegar
2 tablespoons capers (OPTIONAL! Only add if you know that you really like them.)
2 tablespoons chopped fresh oregano
1 1/2 tablespoons brown mustard
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/8 teaspoon hot pepper sauce
1/2 small red onion, peeled and thinly sliced

What you do: 

Cook potatoes in boiling salted water until tender, about 12 minutes. Drain and set aside.
Whisk together oil, vinegar, capers, oregano, mustard, salt, pepper and hot pepper sauce. Set aside.
In a large bowl, combine potatoes and onion. Pour dressing over top and toss gently to combine.
Serve chilled or at room temperature.

SO HOW'D IT GO?

This is pretty good. But it is just SCREAMING for something green! Next time I will add lots of chopped fresh parsley. Also, I may have overcooked the potatoes a bit, and they became pretty mushy. I'm thinking next time I'll try roasting the potatoes instead of boiling them. I have a feeling that would be delicious.

I love the occasional binge of potato salad and havent found one worth making since i had to give up eggs and dairy till now :). I hope to make this once i hit the market but i wonder can i substitute the hot pepepr sauce with pepper flakes? Its hard to find an allergy compliant sauce and i hate to buy something id rarely use....

You could also make your own sauce with a little cayenne, paprika and vinegar - just use the same ingredients as, say, Frank's hot sauce. So not only will you still get the little kick from the pepper but also the bite/twang from the vinegary base of the sauce. That way you maintain the integrity of the recipe and get the intended flavor profile. Go ahead and make a bottle of it so you can use it all the time, it will last a long time in your refrigerator. I love to buy different size canning jars that are great for many other things besides canning like dressings and food storage. Ok, now I feel like an infomercial. Good luck!

Yum, yum, yum!  I love capers but never tried them in potato salad before.  This salad is great for packing in my lunch!  ;)b

Omg, SO good.  I can tell that it would be even better after marinating for a while, but I can't stop myself. :) I used dried oregano instead of fresh and green onions because I didn't have red onions.  I was afraid 2 Tbsp of capers would be too much, but it's perfect.  I'm going to have to try this dressing on other things too.

I enjoyed this... very flavourful and fresh. I added chopped garlic chives to the dressing, and roasted my potatoes in the oven with paprika and garlic salt. Much better than traditional potato salad.

I was going to add my own recipe but this is pretty much it, except i use a large amount of fresh parsley and dill and apple cider vinegar, and shallots. It's the best way to make potato salad imo!

I made this twice recently and loved it! The first time, I followed the recipe exactly. The second time, I added finely chopped celery, green onion, and lots of fresh parsley and dill and a bit of paprika.

A friend of mine, who tells me that she is picky about potato salads and hates most of them, tried this one and proclaimed that she actually really liked it.
