French Toast Sticks

What you need:

1/2 cup nondairy milk
1/2 teaspoon almond or vanilla extract (almond works best)
2 tablespoons oil
1/4 teaspoon salt
1 tablespoon flour
2 tablespoons cornstarch
3 teaspoons sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
4 slices bread, each cut in 4 sticks
oil, as needed
syrup, to serve, optional
powdered sugar, to serve, optional

What you do:

1. Mix first 9 ingredients in bowl (through nutmeg). Dip sticks individually into mixture.
3. Over medium/low heat, on a well greased pan, lay sticks flat down. After 2 to 4 minutes turn sticks, they should be a light brown.
3. Sticks should turn easily when done. Fry for another 1 to 2 minutes before removing.
4. Sprinkle some powdered sugar and dip into syrup, if desired.

SO HOW'D IT GO?

I made this recipe for the second time today.  It is beyond delicious!  I topped mine with blueberries, vanilla granola and syrup.  I doubled the recipe, but only used 3 tablespoons of oil instead of 4.  I'm going to use 2 Tbs. of oil the next time, to try to make it a little lower fat.  I used nine-grain bread.

Just finished wolfing down a big plate of this.  *burp*  :-D  Used stale sourdough bread and just made french toast, not sticks.  I also omitted the nutmeg as I just don't like it much and I quadrupled the recipe to feed myself, husband and 2 hungry children.  It was a hit!  I was skeptical as I was mixing the "custard" as working the lumps out from the flour and cornstarch took a bit of time, but it all came together beautifully and this tasted great.  Nice and crispy outside, soft and chewy on the inside.  I have some leftovers and I think I will reheat those tomorrow in the oven and make some sort of a "cream cheese" filling for the kids.  Will definitely be making this again, and again and again!

Fantastic! Even my pickiest kid loved it! I was out of maple syrup, too! These are even better than regular French toast. Thanks so much!

Finally vegan french toast that doesn't get soggy! We'll be making this at least twice a week!

This was made an awesome French toast.  I cooked mine on med/high to get a nice crisp breading.  I was feeling food naughty so I spread some rice mellow between the layers....oh yeah.

I thought this recipe was a lot better than the other one that I've tried. I stuck with the recipe, but had a little trouble with the frying part. I've used the cornstarch method before, and knew it would work..but my wheat bread was sticking! I think I just didn't have the temp./oil amount right. I also learned that my husband and I just don't like sweet things for breakfast anymore...it was a little too oily/sweet for my stomach. They did come out crunchy though...when I had a couple of good batches. It's a great recipe, but I think it all depends on your taste! : )

Wow!! This really surpassed my expectations. I made it as whole "toasts" and did'nt add any sweetener or extract as I used light vanilla soymilk. The trick was to cook it on a low heat for longer than you would think. It came out perfect, not mushy. I also used whole wheat bread and lots of cinnamon. We had it for dinner!!

This was great ! It is even better if you use Silk Soy Nog for the liquid, gives it that eggy flavor.

These are great! I skipped the nutmeg, and they taste almost just like the ones from the store.  ;)b
