Fresh Pineapple Pie

What you need: 

3 cups fresh pineapple, finely chopped
3 tablespoons cornstarch
1/2 cup sugar
1/4 teaspoon salt
2 (9") pie crusts

What you do: 

1. Preheat oven to 425 degrees F. Cook pineapple until tender, and consistency of canned crushed pineapple. Drain.
2. Mix cornstarch, vegan sugar and salt. Add to pineapple. Cook until thick, stirring constantly. Cool.
3. Pour into pie shell, and cover with top crust. Bake for 25 minutes.'

SO HOW'D IT GO?

this was sooo good... I modified it slightly, do not drain the liquid, added a splash of vanilla
