1 1/2 - 2 lbs. tomatoes (3 cups chopped)
1 small onion
3 - 4 tablespoon cilantro or parsley flakes
1 green pepper
1 jalapeno pepper (optional)
1 - 2 tablespoon vinegar
Chop tomato and onion. (Chop by hand for chunkier salsa.) Mix tomatoes, onions and parsley together. Chop peppers (I really like the veggie taste of salsa, not the hot taste so I leave out the jalapeno) and mix into the tomatoes, onions and parsley. Add vinegar and stir.
