Fried Tofu and Spinach Sandwich

What you need: 

2 - 4 slices tofu
1 handful spinach
1 - 2 cloves garlic
olive oil
soy sauce
whole wheat bread

What you do: 

Fry slices of tofu in olive oil and soy sauce.
In a separate pan, fry spinach and garlic in olive oil.
Place tofu and spinach on toasted whole wheat bread, and enjoy!

Omg my very picky six year old just ate it without one complaint!

This was really yummy! I've never cooked before (mom and I are both veggies, and live on microwave dinners!) so this is a really great ideas for beginners like me :) Mom loved it! I toasted the bread, and added guacamole so it wasn't as dry. Turned out amazing, I will def. be making it more often!

I just had this for dinner and it was yummy! However, I took all the liquid out of the tofu and then let it sit in a mixture of soy sauce, sesame oil, chili paste and pepper flakes for about 20 minutes. It was delicious, and the texture made me think of eggs back when I use to eat them. I'll be making this a lot!
