Garbanzo and Sun Dried Tomato Tasty Spread
2 cups garbanzo beans (cooked)
2 cloves garlic
1/2 cup sun dried tomatoes (soak in warm water if they are dried)
1/2 tablespoon balsamic vinegar
1/2 teaspoon dried basil
1/2 cup walnut halves
1-2 tablespoons water, optional
1. Place everything except the water into the bowl of a food processor.
2. Pulse 5-6 times until mixed and chunky. You can pulse it more if you want something more spreadable, but I enjoyed it with some texture.
3. If it is really crumbly and you don't like that, add the optional water, mixing it in until you get the texture/consistency you want.
Eat with some raw veggies as a snack or put on a sandwich! Hope you enjoy.
Source of recipe: This is a creation that resulted from a tahini recall. I couldn't make hummus so I got creative and it tasted really good!

Can some one please help me? I dont know anything about garbanzo beans...arent they the same thing as chickpeas? Where in the grocery store can I find them? And how do I cook them?

This was so delicious! I doubled the basil and garlic and pureed the whole thing except the walnuts which I stirred in at the end. I also added a pinch of salt and used lemon juice rather than balsamic. Thanks for sharing!
This recipe was super yummy. I used about a half teaspoon each of lemon juice and balsamic vinegar (For those of you who did not like the balsamic, I think it depends on the quality of the vinegar you used. Balsamic vinegars can range anywhere from four to forty dollars a bottle. Balsamic vinegar is one of the few things I make a splurge on!), 4 tablespoons water, half the called amount of walnuts, fresh basil and rosemary, and some dried thyme.
I recommend first blending just the garlic in your food processor so that it gets chopped up finely. Then give a few minutes to the chickpeas, and finally add in the liquids, herbs, and walnuts.
this recipe was sooo good!i had it with some sweet potatoe chips that i made my self.
but my FAVORITE thing to do with this spread was making my 'casadilla' 2 days later with the left overs.I didnt use a flour or corn tortilla, to save calories i used 1 slice of rye bread (90cal), rolled out with a rolling pin (making it bigger and thin). I put a little over a tbs of the spread on 1/2 the bread, added some salt and pepper and folded it in half.Cooked both sides on a skillet using barely any oil! When it was done i cut it in a zig-zag making little triangles. I dipped it in spicey salsa! Best meal i have made by far.

Hey. I combined this recipe with another one to make stuffed aubergine - and it wasn't that good - but what i discovered was that i didn't like the skin on my eggplant - it was really tuff - but the stuffing part - tasted really good - i'd describe it as a "mediterranean vega-loaf" experience.
I used the same recipe for the spread that you list above, plus i added to the puree mixture, sauteed eggplant pulp, about 1 tbsp capers, about 10 green olives - and i formed this into patties and then i let it bake in the oven for about 30 minutes at 175-C
it was really really good. I'm not full-fledged vegan so i ate mine with crumbled feta - it was delicious. My husband doesn't eat cheese and he had a marinara sauce over his.

Thanks for posting this! I used lemon juice instead of vinegar because I was out of vinegar. I also added 1 tablespoon of vegan mayo and made it a sandwich filling. The walnuts are a great addition. Delicious! :)>>>
