Garden Salad Sandwich

What you need: 

bread of your choice (rye, flatbread, or tramizzini is recommended)

olive tapanade 

handful of arugula 

sliced feta cheese

1 avocado

1 tomato 

salt

pepper

oregano herbs

extra virgin olive oil

balsamic vinegar reduction (this can be homemade or store bought)

 

 

 

 

What you do: 

Take 2 slices of your bread of choice and toast them to a light brown. then take a spoonful of olive tapanade and spread on one slice of bread. Next take a handful of arugula salad and lay it on the bread. Then lay out the feta slices, followed by the avocado slices. Slice your tomato(es) and before putting them on the sandwich, season each slice with a pinch of salt, a grind of pepper, and oregano herbs. Lay the tomato over the avocado and then drizzle with olive oil and the balsamic vinegar reduction (the reduction is important because regular balsamic is too fluid and will make the bread soggy). Then top off the sandwich with the other slice and voila, you have a flavor-rich and healthy garden salad sandwich.
