Garlic Dip with Attitude

What you need: 

1 bulb of garlic
1 teaspoon salt (I use Celtic sea salt)
3 tablespoons (45 mls) lemon juice
2 tablespoons water
2/3 cup extra light olive oil
2-3 medium (or large) potatoes

What you do: 

Cook Potatoes (boil, steam or microwave) then mash potatoes.
While the potatoes are cooking, peel the garlic, then process peeled garlic, salt, lemon juice and water in a food processor.
Slowly add the olive oil while processor is running.
Add the mashed potatoes, and blend till you have a nice consistency.
Now enjoy any way you like - on bread/toast/crackers, carrot sticks, etc..
You can thin it down with soy milk if you wish. I have also made it with finely chopped fresh rosemary and another time, with mixed Italian herbs.
