Garlic Soup

What you need: 

8-10 cloves of garlic
6 cups chicken-style veggie broth OR
6 cups water plus three cubes veggie bullion
1 1/2 cups water
1 very large or 2 small green chilies
1/2 teaspoon pepper
1 green onion OR
1/16 of a large yellow onion
a sprits of olive oil
3-4 slices cubed bread OR
2 cups small vegan noodles
1 cup prepared chicken-style gluten, diced

What you do: 

This is a great soup for cold and flu season; garlic boosts the immune system and the chilies open up the sinuses. Its also one of the few foods I can taste when I have a cold.
Peel, then mash, grate, or mince the garlic. Seed and mince the chilies. Mince the onion. Sauté briefly in olive oil in the bottom of a large soup pot.
Add broth, water, and pepper, and simmer with noodles and gluten (if using).
If using bread, add just before serving. This soup is also good with a few diced carrots and celery stalks thrown in, but when I'm sick I don't have the patience for chopping. Enjoy and get better!
