Garlic Tofu Salad

What you need: 

4 ounces firm tofu, drained
1 clove garlic, minced
1/2 teaspoon chopped fresh parsley
1/8 teaspoon paprika
1/8 teaspoon salt
4 slices whole wheat bread, toasted

What you do: 

Mash tofu with garlic, parsley, paprika and salt in a small bowl. Spread on toast.
