Garnachas

What you need: 

2 corn tortillas
2 tablespoons Mexican salsa
1/3 small white onion, diced
1/4 to 1/2 cup mashed black or pinto beans OR vegan refried beans
1 tablespoon olive oil

What you do: 

1. Preheat skillet over medium heat with about 1 tablespoon olive oil and cover entire skillet.
2. Smear two corn tortillas with mashed beans, scatter onions on top and pour about 1 tablespoon salsa on top.
3. Heat tortilla over medium-medium low heat for about 8 to 10 minutes or just before the onion begin to get hazy and the bottom of the tortilla is toasty golden.
Source of recipe: Growing up my mom would make these for me and she actually learned this recipe through a friend. So one day I googled it and it's pretty versatile, it's essentially a tosta... You can add lettuce, tomato, pretty much anything that strikes your fancy! I'm pretty simple; therefore, this recipe is pretty simple so FACE. Enjoy!
