Gary's Vegan Bread

What you need: 

3 1/2 cups white whole wheat flour (I use King Arthur brand)
2 tablespoons canola oil
2 heaping tablespoons ground flaxseed
1 banana, mashed
2 teaspoons salt
4 heaping tablespoons vital wheat gluten
2 teaspoons bread yeast
1 1/2 cups water

What you do: 

This is a bread machine recipe.

SO HOW'D IT GO?

I'm new to bread making. This looks exactly like the recipe I need. is this a 1 lb loaf or 2 lb loaf?

My bread machine is a bit older I think and it doesn't have a 'light brown' setting. It has a 'Basic Bread' and 'whole grain'. I am going to use All Purpose flour that "acts like white flour but has the goodness of whole wheat". Does anyone know if the Basic Bread setting would be appropriate for this recipe?

I made this bread today, and it was . . . awesome!  Really good.  Had a big slice of it for dinner with a salad.  I followed the recipie exactly except that I used 1/2 oat flour and 1/2 white whole wheat flour.  As for the banana taste, my husband wasn't around when I made the bread and he couldn't taste it.  It is very, very subtle, and the bread is not at all sweet.  It's just really good, basic bread.  Thanks Gary!

This recipe looks good, but I have a question. Are you using the banana as an egg substitute, and if so, have you tried others, such as flax? I don't know if I'm keen on the banana flavor for regular savory bread, so I'm curious.

I use the banana as both an egg substitute and to assist with the flavor.  Most recipes use sugar which I avoid. You really can't taste just one banana though.  The flax seed acts as an egg substitute too and provides Omega 3 along with the canola oil.

This bread came out quite well. I wonder if a zucchini bread would go well with this kind of a recipe
