George Foreman Panini Sando

What you need: 

2 slices whole wheat bread
1 handful spinach
roasted red pepper (from a jar)
1/2 avocado, sliced
hummus
salt and pepper

What you do: 

Plug in your George Foreman Grill & let heat up.
Spread the hummus (any variation you choose, I use roasted garlic) on both slices of bread. Pile on your handful of spinach on one side. Take your roasted red peppper pieces out of the jar & pat dry with a paper towel. Place on top of spinach and sprinkle with salt & pepper. Top with slices of avocado and cover with other slice of bread.
Place the sandwich in the George Foreman grill for 1-2 minutes. Check to make sure you don't burn it. And out comes a perfectly toasted & delicious panini!!!
***Lots of variations on this sando --garlic & olive oil instead of hummus, basil, sun dried tomatoes,vegan pesto....... i like to get creative with what I have around. But the George Foreman is the kicker in this recipe.
