Gingerbread-Nut Muffins

What you need: 

1 3/4 cups gluten-free flour blend or regular flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cloves
1 cup applesauce
1/4 cup molasses
1/2 cup sucunat
1/2 teaspoon vanilla
3/4 cup chopped walnuts

What you do: 

1. Preheat oven to 350 degrees F. Grease muffin tins. Combine dry ingredients in a large bowl. Set aside.
2. Combine wet ingredients in another bowl. Pour wet into dry. Stir until combined. Add walnuts. Stir until further combined.
3. Spoon batter into prepared muffin tins and bake for 26 minutes, or until an inserted toothpick comes out clean.
Source of recipe: Muffin #3, Gingerbread! For Christmas' sake and for the molasses that has been staring at me everyday for the last 3 weeks.
