Gingerbread

What you need: 

1/4 cup Earth Balance, chopped
1/2 cup boiling water
1/2 cup molasses
2 teaspoons baking powder
1 teaspoon ginger, or more
1/4 teaspoon salt
1/3 cup sugar
1 1/4 cups flour

What you do: 

Preheat the oven to 325 degrees for an 8-inch pan, or 350 degrees for muffins.
Add Earth Balance to hot water and stir until melted. Add molasses to that.
Mix the dry ingredients together and add them gradually to the wet ingredients, stirring until just mixed. Do not over mix.
Pour into a greased 8 or 9-inch square pan or greased muffin tins. Bake 35 minutes for the pan, 15 minutes for the muffins.
This is best served warm with some sort of whipped non-cream, or just sprinkle with confectioner's sugar.

SO HOW'D IT GO?

I made this today and it was delicious for vegans and non-vegans alike.  I took Camillus advice and added an extra 1/4 cup of flour, and a bit more ginger, some cinnamon and a bit of chopped candied ginger!  Yum, a real winner!

I decided to make this even though I thought the measurements were a bit off.  1 and 1/4th cup of flour seemed to little to me, but I proceeded to make this as the recipe called for.  The batter ended up a bit runny for me so I added about 1/4th cup of extra flour to it, and even though it was still a bit runny tossed it in the oven at 325 for 35 minutes.  To my surprise it finished perfectly in that amount of time, and rose a lot!  It tastes very good too, and my only suggestions on how to improve this would be to use 1 1/2 cup of flour, and add an extra tsp of powdered ginger, and 1/2 tsp of cinnamon.  Also, you might want to let the batter/dough sit for 10 minutes before you toss it in the oven, so as to give the baking powder time to 'rise' or bubble.
