Gingered Rice

What you need: 

1 bag burger-style crumbles (like Boca or Morningstar Farms)
1/4 cup canola oil
1/2 teaspoon ground ginger
2 cups water
2 cups quick cooking brown rice
2 cups sugar snap peas (fresh is best, but frozen will do)
1 red pepper, chopped

What you do: 

Saute crumbles in oil until mostly thawed. Add the ginger, water & rice. Bring to a boil and then turn down to a simmer. Simmer for 5 minutes, then add peas & pepper. Simmer another 5 minutes then serve.
