Golden Mushroom Soup

What you need: 

2 onions, chopped
1 pound mushrooms, sliced
1 tablespoon paprika
1 1/2 teaspoons dill
1/4 teaspoon black pepper
3 tablespoons soy sauce
1 cup water or vegetable stock
1 tablespoon olive oil
2 tablespoons unbleached flour
2 cups soy or rice milk
2 tablespoons lemon juice

What you do: 

1) Heat 1/2 cup of water in a large pot and add the onions. Cook over high heat, stirring often, until the onions are soft and all the water has evaporated, about 5 minutes. Add another 1/4 cup of water, stir to loosen any bits of onion stuck to the pan, and continue cooking until most of the water has evaporated and the onions begin to brown, about 3 minutes.
2) Add the mushrooms and spices. Slightly lower the heat, cover, and cook 5 minutes, stirring frequently.
3) Add the soy sauce and water or vegetable stock. Cover and simmer about 10 minutes.
4) In a separate pan, mix the olive oil and flour to form a thick paste. Cook, stirring constantly, for 1 minute, then whisk in the vegan milk and cook over medium heat, stirring frequently, until steamy and slightly thickened.
5) Add the vegan milk mixture to the soup. Stir in the lemon juice just before serving.

SO HOW'D IT GO?

Fabulous! This is my new favorite soup!! I love soup, and turn almost any dish into a soup...but this recipe tops them all!!!

Amazing soup..so yummi..I made it so fast to and I sub..the flour for potato starch..works the same..and I can't

believe how yummi it is..just like what you buy at the store with beef stock but much better with vegan stock.:)

Great! My extremely opposite non-vegan, picky boyfriend loves this stuff!! I usually use non-sweetened almond milk and half the amount of paprika. It is super easy to make and fills you UP. Thanks for posting.  :)

i think i'll use unsweetened almond milk next time though!

I could tell this was going to be good, but it turned out to be scrumptious!  I loved the paprika and dill flavor combo.  I think next time I'll blend a cup of this soup to make it creamier, but it was very good.

Great soup! I used unsweetened almond milk and veggie broth. Next time I will use a little bit less paprika. It was so good that my extremely picky boyfriend was licking the bowl. Also- it was easy to make! Thanks for sharing! :)

This soup is delicious! I modified it because I didn't have the spices. I used herbs de province, lots of black pepper, sea salt, local bourbon smoked paprika and garlic powder.
I also added shredded carrots. Next time I will use a real dutch oven though. The enamel pot that I used didn't work well for the onions and carrots at the beginning. I skipped the additional water at the beginning because the water wouldn't evaporate and just added the mushrooms and spices in once the onions and carrots were cooked. The rue came out perfect! I had to use dry soymilk powder to make 2 cups of milk and it turned out great. I often use dry powdered soy milk in "creamy" recipes for additional flavor/color. For some reason I think this would be good with red peppers. I may add them next time.

yummy! i made a few changes because i needed to halve the recipe as well as use up some veggies in the fridge...so i added 1 stalk of celery and 1 medium carrot, both sliced very, very thinly; at the end i also added 2 leaves of kale torn up. because of all the rave reviews i figured i could take some liberties, and sure enough it turned out lovely. the paprika really does add to the golden color, and i highly recommend adding extra veggies because it makes it even more beautiful. thanks for a great recipe! :)

We really enjoyed this, and I'm not even a big fan of dill.  The only thing I did differently was to reduce the soy sauce to 2 Tbsp because I was afraid it'd turn out too salty.  I'll definitely be making this again.

This is the best thing I've ever made or eaten. My husband actually moaned after the first taste ;), and my daughter almost ate 2 whole bowls.  :)>>> Absolutely amazing. It didn't last long at all. It did turn out brown, but when I tasted it, I didn't care.
