Goma-ae (Japanese Spinach Salad with Sesame Dressing)

What you need: 

1 pound frozen or fresh baby spinach
1-2 tablespoons mirin (rice wine) or sake, or vegan white wine
1-2 tablespoons toasted sesame oil, or ground toasted sesame seeds
1-2 tablespoons tamari, soy sauce, or teriyaki sauce
1 teaspoon sugar (omit if using teriyaki sauce)

What you do: 

1. Thaw the frozen spinach and drain well. Or, if you're using fresh spinach, just wilt, drain, and refrigerate until cool.
2. For sauce, mix mirin, sesame oil, tamari, and sugar together, and add to the spinach. Serve cool, or at room temperature.
Try this with broccoli, too!

SO HOW'D IT GO?

This was very good, especially chilled. I think it would be nice with some toasted sesame seeds sprinkled on top. Unfortunately, I was out of them.  :(

Lovely! I was looking for this recipe and couldn't remember what it was called! I used rice wine vinegar instead of mirin and added a pinch of sugar to cut the sharpness a bit. It's fine with unwilted spinach, too.

Yum.  This was great and easy.  I used sugarcane juice vinegar instead of rice wine vinegar because I was out.  Very tasty.  I will be using the dressing for future salads!
