Grandma Anarchy's Chocolate Chip Cookies

What you need: 

2 1/4 cup unsifted all purpose flour
1 cup softened (not melted) non-hydrogenated, vegan margarine
3/4 cup sugar
3/4 cup brown sugar
2/3 cup applesauce
1 teaspoon baking soda
1 teaspoon salt
1-2 teaspoon vanilla extract
9 oz. of vegan chocolate chips

What you do: 

Preheat oven to 375. In a small bowl mix together flour, baking soda, and salt. In a large Cream together brown sugar, sugar, vanilla and margarine until it has a still chunky but somewhat smooth texture. Slowly add flour mixture in and mix until smooth and thick. Mix in chocolate chips. Bake cookies on guess what? A cookie sheet for 10 minutes or when they are soft enough but solid enough to eat.
These are great for bake sales and Food Not Bombs. Just wrap them up in plastic wrap.

SO HOW'D IT GO?

I stole a few of the reviewer's ideas and made bars as well. I tried using 2/3c pumpkin plus 2 tablespoons almond milk in place of the applesauce. In the end I added an extra 1/4c whole wheat flour because the dough ended up very soft, almost too soft for cookies. I also added 1tsp almond extract with the vanilla. The dough was so good I even froze six ping pong sized balls of dough to snack on later. All in all this is a great recipe whether you tweak the ingredients or follow it to a T!

THESE were PERFECT!!! i didn't have any foil left, so i ended up using a shallow pie dish instead. COOKIE PIE! they were delicious..and i don't think my omni friend who loved then didn't even knew they were vegan!

i used carob chips, coconut oil/marg mix, mashed banana mixed with 1 tablespoon corn starch and water to equal 2/3 cup instead of applesauce, whole wheat flour, macadamia nuts, and a mix of sugar and maple syrup for the sweet. its all the same proportions, just slight variations on the ingredients to make "tropical vacation grandma anarchy's chocolate chip cookies"! yeay! i'm totally gunna make these at the next food not bombs!

i love how they spread out and are slightly chewy when warm. so good!

They were amazing. I only used 1 c of sugar and substituted 1/2 the margarine with coconut oil which really added to the flavor. I also added cashews. I made some regular non-vegan cookies and brought both to the playgroup. Everyone freaked out about  the vegan ones.They were so soft.

This was a great recipe! We added some coconut into the batter before baking and then sprinkled a bit on top as well! It turned out super yummy. We used some baking chocolate (with no dairy ingredients) that we heated in the microwave and then chopped up into chunks. Instead of making cookies, though, we ended up making bars...more like brownies, and a bit thicker! This really worked well. The yield was 24 nice-sized bars.  ;D
