Grandma's Chick'n Salad

What you need: 

1 cup chickpeas
1 to 2 tablespoons vegan mayonaise
1/4 cup dried cranberries
1 to 2 tablespoons green onion, chopped
Salt and pepper, to taste

What you do: 

1) Combine beans, vegan mayonnaise, and cranberries in a medium bowl, Stir to combine. Using the back of a spoon or a fork, smash the beans to create a chunky texture. Add green onions and season with salt and pepper. Enjoy!
