Grilled Avocado Sandwich

What you need: 

4 slices sandwich bread
vegan butter, as needed
whole grain mustard, to taste, optional
vegan mayo, to taste, optional
1 large ripe avocado, sliced thinly (I like Hass)

What you do: 

1. Spread the buttery spread on one side of all the bread slices. Place one slice, buttery side down, in a preheated frying pan over medium-low heat. If you want to add vegan mayo, mustard, or other "dressings" now is the time!
2. Otherwise, lay the avocado slices from one half of the avocado on the bread, covering well. Place another slice of bread, buttered side up, on top. Let cook 3-5 minutes, or until the bottom is golden to your liking.
3. Carefully flip the sandwich over and grill the other side 3-5 minutes. Repeat the above to make the second sandwich.
This is best when you have a really fatty, good avocado (like Hass). If you use a Florida or other "low fat" or "wet" avocado the flavor is still there but it isn't as good, in my opinion. This goes well with soup.

I am obsessed with this sandwich! It feels like such a yummy indulgence. It's so easy yet so good and filling too.

i was cruising and saw how many comments my humble little recipe has - wow! and i thought i was an oddball for making this tasty treat. i'm glad everyone has enjoyed it and tweaked it to their own tastes!

i also like to put vegan mayo on this. and a bit of stone ground mustard. OHH.

wow. this was so simple, and yet soooooooooo goooooooood.

I followed this recipe, but made guacamole instead of just sliced avocado. I mashed the avocado and added fresh lime juice, salt, onions, cilantro, garlic, tomato, and a dash of cayenne. I grill it on Ezekiel Sesame bread with some fresh spinach leaves.

I'll never crave grilled cheese again!

Yummy ! This sandwich is so good.  I used multi grain bread , and ate with my tomato salad.  ;)

Somehow I managed to mess this up. I burned the bread. And I put tomatoes on it, but it tasted funny. I took off the tomatoes and it was very good though, despite the extra crispy texture. Very yummy. Slightly over 400 calories and filling.

I forgot to add-- I used spelt bread on this sandwich.  It was great!

Tastes great and is very fast and easy to make!  I smeared veganaise onto each bread slice and added sliced tomatoes and a bit of salt.

Mmmmm... so freaking good! What I do is use a grapefruit spoon to carve out very thin, wiggly slices of the avocado and layer it on the bread... the end result is a texture that's a bit more reminiscent of grilled cheese than if blunt slices are used. However, it's delicious either way.  :)>>>
