Grilled Avocado Sandwich

What you need: 

4 slices sandwich bread
vegan butter, as needed
whole grain mustard, to taste, optional
vegan mayo, to taste, optional
1 large ripe avocado, sliced thinly (I like Hass)

What you do: 

1. Spread the buttery spread on one side of all the bread slices. Place one slice, buttery side down, in a preheated frying pan over medium-low heat. If you want to add vegan mayo, mustard, or other "dressings" now is the time!
2. Otherwise, lay the avocado slices from one half of the avocado on the bread, covering well. Place another slice of bread, buttered side up, on top. Let cook 3-5 minutes, or until the bottom is golden to your liking.
3. Carefully flip the sandwich over and grill the other side 3-5 minutes. Repeat the above to make the second sandwich.
This is best when you have a really fatty, good avocado (like Hass). If you use a Florida or other "low fat" or "wet" avocado the flavor is still there but it isn't as good, in my opinion. This goes well with soup.

SO HOW'D IT GO?

Not bad.  With enough salt, this sort-of resembled a grilled cheese. 

I mashed my avocado instead of piling it in slices (I thought the avocado would "melt" if it was mashed and because the grilled cheese sandwiches I used to have were very gooey and melt-y).

Added finely sliced onion ,a few sliced red bell peppers , Vegannaise, regular mustard & coarsely ground black pepper.
Wish i had  had a grain bread. Next time!!!!!!!1

I tried making these one and for some reason ended up hating them. I HAD to try them again since everyone raves about them.and wow. I used veganaise, diced tomato, and ground pepper. They're freaking amazing even though I burned both sides of the bread to complete blackness! This will for sure become a quick and easy staple!  ;)b

This is VERY yummy. I've been craving it more recently because I live in a dorm that lacks a kitchen along with permission for almost every appliance known to man...
I prefer it with a few good shakes of a garlic and onion seasoning mix (forgot the name) and a few slices of tomato. Mmm... <3
It kicks cheese sandwiches' ass.

I love these, and also the uncooked version.  You can also make "quesadillas" with avocado instead of the cheese.  I love avocado! :)>>>

I have to post on this recipe again because I just had another one of these, and I am in yummy vegan heaven! I think I might turn into an avocado...

I was pleasantly surprised at how delicious this sandwich turned out. I just used tomatoes and avocados on the sandwich and it was perfect. I also used garlic salt on the toasted sides of the bread. Mmm. Thanks for the recipe!

I mashed up my avocado, and sprinkle a little onion and garlic powder in it.  If I am feeling really saucy, I'll add a few slices of tofurkey slices to it also.  So good.  So easy.  So delish!  A wonderful way to use avocados before they go bad!!

Very good idea. I didn't know what to do with my avocado, and so I made this. And then I made it again!

With lots of salt and pepper, it's definitely even with grilled cheese for taste and that classic texture. And it isn't processed! Win.
