Grilled Avocado Sandwich

What you need:

4 slices sandwich bread
vegan butter, as needed
whole grain mustard, to taste, optional
vegan mayo, to taste, optional
1 large ripe avocado, sliced thinly (I like Hass)

What you do:

1. Spread the buttery spread on one side of all the bread slices. Place one slice, buttery side down, in a preheated frying pan over medium-low heat. If you want to add vegan mayo, mustard, or other "dressings" now is the time!
2. Otherwise, lay the avocado slices from one half of the avocado on the bread, covering well. Place another slice of bread, buttered side up, on top. Let cook 3-5 minutes, or until the bottom is golden to your liking.
3. Carefully flip the sandwich over and grill the other side 3-5 minutes. Repeat the above to make the second sandwich.
This is best when you have a really fatty, good avocado (like Hass). If you use a Florida or other "low fat" or "wet" avocado the flavor is still there but it isn't as good, in my opinion. This goes well with soup.

I am a fan!! i felt a little guilty eating this though because i am trying to eat more raw foods but LOVE avocados so had to try this. i really liked it, gave me that grilled cheese satisfaction! def. a staple now ( i cheat a lot on this raw foods thing) lol. >:D

I know that I've already commented this recipe, but this sandwich is so amazing and easy.
My boyfriend and I make it all the time.

I have made this with ekziel  or what it's called bread, and it is tasty tasty !

Wow, I made this on whole wheat bread with tomato, chives and veganaise and it was delicious! I just wish it wasn't so fatty so I could eat them all day long. :)>>>

mmm totally good. i mixed up a bowl of guacamole (avocado, salt, pepper, garlic powder, diced tomatoes, and a little lemon juice) and that's what i used as my filling. i dipped it in tomato soup!  :>

I never thought I'd like avocado, but when I saw this recipe in my email (vegweb weekly recipies) I had to try it.  It's sooo goos that I don't even miss grilled cheese anymore.  Not that it's cheesy-like or anything, but it's sooo good!

I had 2 because one just wasn't enough.  I plan on making more tomorrow.  I'm glad I bought a bunch of avocados for this!  MMmmmm  And it takes just minutes to make.  Doesn't get any better.

"mmm....m! Yummy goodness!"  "I could just eat 100 sandwiches just like this!" My six year old son's words.

I bought avocados at the store today just to try this recipe. I am so glad I did. I pretty much did as the recipe suggested - just added a spinkle of salt and buttered just one side of the bread. And Veganaise on the inside of course.

Oh, son, Jayden, just told me that this was the sandwich of his dreams.

I was thinking that some alfalfa sprouts would really add some crunch to this sandwich. Totally going to make it again. :)>>>

Mmmm Good idea crazy tree hugger! I am going to totally steal your idea of the sprouts and have this for supper tonight! I will let ya know..

Mmmm! I thought this was delicious and I just happened to have the ingredients. I found this recipe just in time for lunch..  :)
I added garlic powder and pepper and next time I will add some tomato and red onion and perhaps some romaine lettuce. I enjoyed everyone's comments and versions of this sandwich too. I will try adding lime, cilantro and tomato sometime.

New to being vegan due to health issues, this sandwich really hit the spot for something easy and simple!  ;)  I actually prefer this over a regular grilled cheese!  I added some green peppers, and a dash of salt and pepper... wow.  Super yummy!  Thanks!

I can live off of these. My favorite way to make it is to mash the avocado with some lime, cilantro, salt and pepper; with a little bit of mustard and tomatoes, and only a little butter on the outside. Mmmm.
