Grilled Avocado Sandwich

What you need: 

4 slices sandwich bread
vegan butter, as needed
whole grain mustard, to taste, optional
vegan mayo, to taste, optional
1 large ripe avocado, sliced thinly (I like Hass)

What you do: 

1. Spread the buttery spread on one side of all the bread slices. Place one slice, buttery side down, in a preheated frying pan over medium-low heat. If you want to add vegan mayo, mustard, or other "dressings" now is the time!
2. Otherwise, lay the avocado slices from one half of the avocado on the bread, covering well. Place another slice of bread, buttered side up, on top. Let cook 3-5 minutes, or until the bottom is golden to your liking.
3. Carefully flip the sandwich over and grill the other side 3-5 minutes. Repeat the above to make the second sandwich.
This is best when you have a really fatty, good avocado (like Hass). If you use a Florida or other "low fat" or "wet" avocado the flavor is still there but it isn't as good, in my opinion. This goes well with soup.

Oh my god!! I just made this FINALLY and you MUST make this sammie NOW! It reminds me so much of a grilled cheese but kicked up a gazillion notches. I made this on my grill pan which just added a really yummy smokey flavor in the background.  I used veganaise, dijon mustard, and regular yellow mustard, and topped with tomato slices and red onion.  So good and quick......Pictures to follow...right after I go make another one!  ;)

Mmmm! These were so yummy! I had sauteed some onions for another dish I was making, so I put them on my sandwich with the avocado. YUM! I also mashed up the avocado. Probably didn't change the taste any ;) but the kids liked it better. Big hit and will definitely make again soon! Very easy


So, I thought this would probably be the best way to try out avocado, since I have never had it alone (only had it in guacamole like.. 6 years ago). I don't know what it is, but avocado and I just don't get along. I don't really like the taste of it, by itself. However, when I tried this recipe (with avocado, bread and mustard only), it was really really good :) This is a great way to enjoy avocado, though I can assure you. I won't be eating it by its lonesome anytime soon -Laughs-


Yep, this was great for dinner tonight.  After one bite, I wanted to take away my daughter's half of the sandwich so I could eat it all.  Next time I think I'll just give her the avocados to eat and make the sandwich for myself.  >:D


Hard to believe the avocado can be improved upon. But it can. In this recipe.

I added red onion and chipotle peppers. Delicious! Delicious! Delicious!


I am eating this right now! They are very good, but I burnt mine on one side. :(

Practice makes perfect, I guess. I'll be making them again for sure!
