Grilled Eggplant

What you need: 

4 tablespoons olive oil
basil, to taste
salt and freshly ground black pepper, to taste
1 firm, medium sized eggplant, peeled and sliced

What you do: 

1. Place olive oil and spices in a shallow, large bowl. Place each piece of eggplant in and turn to coat both sides.
2. Place slices on a grill, turning only once during grilling.
3. Serve with any sauce you like or just eat plain. They are delicious.

SO HOW'D IT GO?

Absolutely delicious. I don't have a grill, so I cooked it under the broiler and it was just wonderful. A new favorite!
