Grilled Shitake Mushrooms in Arugula
2 tablespoons soy sauce
2 tablespoons sesame oil
2 tablespoons olive oil
2 teaspoon sugar
1 bunch arugula, stems removed
12 shiitake mushrooms ( 1 pound), stems removed
4 teaspoons esame seeds
1. Prepare the seasoning sauce by combining the soy sauce, sesame oil, olive oil and vegan sugar.
2. Preheat the broiler. Place arugula on salad plates.
3. Place mushrooms cup side up on broiling rack. Brush sauce on caps, and position rack 4-6" away from heat.
4. Broil for 2 to 3 minutes. Place mushrooms on arugula, drizzle the rest of the sauce and the sesame seeds, and serve.'
