Groovin Sundried Tomato Pasta

What you need: 

8 cups pasta with grooves
30 sundried tomatoes (not packed in oil)
1 (6 ounce) can pitted black olives, coarsely chopped
1/4 cup olive oil, optional
3 cloves garlic
3 tablespoons dried rosemary
1 tablespoon dried parsely
1 tablespoon salt and pepper
1 cup vegetable broth

What you do: 

1. Place the pasta in a large sauce pan and fill with water until just covering the pasta. Bring to a boil, and stir occasionally. While the pasta is cooking, place the sundried tomatoes in a shallow bowl covering them with water.
2. Microwave for 2 minutes or until reconstitued and soft. Carefully pat dry and chop sundried tomatoes into small pieces. In a blender, food processor or hand blender, add the sundried tomatoes, olives, olive oil (if using), garlic, herbs and spices.
3. While blending, incorporate the vegetable broth to create a loose, yet still chunky paste. Check the pasta. Cook until just tender. Drain the pasta well.
4. Mix the sundried tomato sauce/paste with the pasta making sure the sauce clings to the grooves in the pasta. Serve immediately.
