Happy Hippies in the Morning Breakfast Burrito

What you need: 

2 tablespoons olive oil
3 green onions, chopped
1 to 2 leaves kale, finely chopped
1/4 bell pepper, chopped
1/2 cup mushrooms, sliced
1/4 cup tomato, diced
1/2 (12 ounce) block firm tofu, drained and crumbled
2 tablespoons nutritional yeast
1 clove garlic, minced
1/2 teaspoon turmeric
dash cayenne powder
salt and pepper, to taste
1 avocado
2 large flour tortillas
salsa verde, to taste

What you do: 

1. In a large skillet over medium heat, heat olive oil. Add green onion, kale, bell pepper, mushrooms, and tomatoes. Let fry about 3 minutes.
2. Add tofu, nutritional yeast, garlic, turmeric, cayenne powder, salt, and pepper. Let that fry for about 5 minutes.
3. Mash avocado into a paste and spread evenly over the two tortillas.
4. Add mixture to tortillas filling each with 1/2. Roll up burrito and top with favorite Mexican toppings! I like salsa verde on mine!

SO HOW'D IT GO?

I modified this quite a bit to suit my lack of ingredients, but I have to say, I never thought of putting turmeric in a breakfast burrito. When I was making the recipe, I was also told that it was a very healthy spice, so there's a bonus, too! Even if I had included everything, I think this still would have been something very quick to whip up, which is good, because I had made the tortillas from scratch and was not looking forward to something labor-intensive.
Oh, by the way, for those not into avocado, why not try hummus instead? Not the stuff from dry mix, and preferably homemade, as that would have the best, freshest taste. I put hummus on lots of things, and wanted to put it in this, too, but that would have taken even MORE work (and again, I had already made those tortillas the night before). Yeah, I'm lazy. I know it would've totally been worth it.

This is actually pretty good!  :) The only things I did different were not put in the kale, the mushrooms and the nutritional yeast. I couldn't find kale at my market and I forgot to get it at my grocery store :( Mushrooms I just plain don't like  :P so I intentionally left them out. I thought my dry active yeast that I already have at home was the same as nutritional yeast. Uh, wrong. :lol: Everything still seemed to come out good without the 3 ingredients, so I'm curious to see what this would taste like with at least the kale and the nutritional yeast. Next time. I would say though that although I do like to cook with turmeric. It is very messy and stains a lot. Oh, yeah, and I'm not a fan of avocado. I don't care for the taste, or how messy, slippery and slimy it is, or how hard it is to mash but I will say that I actually liked it in this. Overall, this was good and I will try making it again!
