Healthy Fast Food Biscuits

What you need: 

3 cups unbleached flour
1 cup whole wheat flour
2 teaspoons salt
2 tablespoons Sucanat
6 teaspoons baking powder
1 1/2 cups nondairy milk + 2 tablespoons white vinegar
6 tablespoons canola oil
1 tablespoon vegan margarine, melted, optional

What you do: 

1. Mix dry ingredients in a large bowl. Add other ingredients. Stir until dough forms. Allow to sit for 30 minutes if time permits.
2. Preheat oven to 425 degrees F. Roll out to 1/2" thickness. Cut into 12 biscuits using a biscuit cutter or a glass.
3. Brush the tops with melted margarine, if desired. Bake on an ungreased cookie sheet for 10 minutes or until browned. (Do not let biscuits touch.)
These biscuits are thick and are best used to sandwich other items. Scrambled tofu is a great filler!

SO HOW'D IT GO?

I only used unbleached flour and let them rise for only 10 minutes without the melted margarine. We decided to put vegan gravy on some and jam on others. They  were a bit dry, but some gravy or jam makes it perfect.
So if you are planning to eat biscuits with something these will definetly do. Otherwise.. not so good.

I didn't even let them rise and they came out really good.

I scaled this recipe down since i'm the only one eating it, but the batter was way to dry and impossible to mix, I added a little more milk, still dry, added a little more then it was to wet & gross so I had to throw it out :-( oh well, it sounded good.

I halved the recipe, and now I'm regretting that decision, because these biscuits are so good!  They were perfect with soysage and gravy, but I think they're going to be even better with peanut butter and jelly for lunch tomorrow!

Following oli's suggestion, I used 1/2 cup of pastry flour in addition to the wheat flour and scaled back on the white flour.  I plan to use this recipe for all of my biscuit needs from now on 8)

So so so good!  Great with gravy (I used the punk rock chicpea gravy from VwaV).  Easy to make too.  I halved the recipe and it still made 12 biscuits, and I measured also.  Will try making them thicker next time.  Thanks for the yummy recipe!

These were great!  However, this made more than 12 biscuits for me.  I measured 1/2'' with a ruler.  Next time I make these, I will roll them out to be 3/4''-1'' in thickness.  But very tasty!

these biscuits were truly awesome.  i made them for my christmas day dinner with veg posole (hominy, beans and chile).  they turned out perfect!  my first try at making a bread product from scratch.  i also used ww pastry flour and raw sugar, and olive oil (had to use what i had handy), and they were so simple.  this recipe will definitely be in my permanent file of winning recipes!!  thanks, robin!

i was just looking for an easy bread. reading the other comments, i was skeptical. how could plain old bread be "amazing?" but OH MY GOSH, THESE ARE AMAZING! they taste like the flakey pillsbury biscuits i haven't eaten in so long. i could eat the whole batch in one sitting.
i used non fat soy milk and apple cider vinegar, and i did not use the optional margarine.
