Healthy, raw salt

What you need: 

3 large heads celery, chopped (with or without leaves)

What you do: 

1. Dehydrate celery pieces.
2. Grind into a powder.
The quicker celery dries out, the more flavor/aroma it retains.

SO HOW'D IT GO?

about processed salt and why it should not be part of a raw food diet:

The salt most commonly used (refined table salt)  is mined from the earth with bulldozers and heavy machinery, iodized, bleached, and diluted with anti-caking agents. Chemicals are added to refined salt in the processing and all the beneficial minerals and trace elements are removed. Not really in the spirit of raw foodism at all.

There is a good salt product (that I have not tried) called Celtic Sea salt. It's grayish, strong tasting, and produced by mining sea salt and letting it dehydrate only, with all minerals and elements intact. It's expensive (I'm poor) so I've never bothered with it.  The only reason anyone might consider this is because of its high mineral content, particularly magnesium content.

Magnesium is needed for calcium absorption, heart and central nervous system function, and is beneficial to a myriad of things from depression to blood pressure to stroke prevention. The list goes on and on.

I'm not sure about regular sea salt sold in grocery stores, but I wouldn't bother with it either. Unrefined salt is never white.
