Healthy Tofu,Carrot and Peas Samosa Wrap Sandwich

What you need: 

1 large carrot, chopped

3 oz extra firm tofu, cubed
1/4 cup frozen green peas
2 tablespoons of salsa or 1 tomato, diced
1/4 cup Vegetable Broth
1/2 a small lemon, juiced (to taste)
1 teaspoon cumin powder
1 teaspoon paprika
1 teaspoon coriander powder
1/4 teaspoon cayenne pepper
2 tortillas, pita bread, or your wrap of choice
1/4 cup chopped parsley (Optional)
Salt and pepper to taste
What you do: 

1. Place carrots in the microwave and cook until fork tender, about 4-5 minutes.

2. In a non-stick skillet over medium-high heat, place tofu and allow to brown, add carrots and peas.
3. Add salt, and spices, stir to distribute spices evenly, before adding diced tomatoes, or salsa, stir well.
4. Add vegetable broth, cook until all liquid evaporates, then add lemon juice and parsley, stir.
5. Serve over pita, tortilla, or in a lettuce wrap.
