Hearty Vegetable Soup (you might call it "stew")

What you need: 

3 cups water
2 teaspoons condensed veg stock(or two cubes veg bouillon)
1 handful fresh cilantro
2 cloves garlic, crushed
2 whole carrots, chopped
2 stalks celery, chopped
1/2 sweet white onion, chopped
3/4 cup chopped mushrooms of choice
1 cup prepared chick peas
1/3 green cabbage, chopped
2 tablespoons balsamic vinegar
1 teaspoon chili powder (more or less to taste)
1/2 teaspoon cinnamon
1/3 cup textured soy protein "beef-like chunks" (or whatever TVP/TSP you have in your
cupboard)
1/3 cup pasta (I use veggie-mac for the lovely semolina flavor)

What you do: 

Put water, bouillon and cilantro in a HUGE pot on med/high heat and add ingredients in order.
It's super simple: just chop, add, chop the next ingredient, add, etc.
Once everything is in the pot, simmer for about 15 minutes, stirring occasionally.
Great for leftovers -- a real crowd pleaser!

SO HOW'D IT GO?

mmm, this was delish! i didn't use any cilantro, cinnamon, or fake meat, and I added salt and some garlic powder. it was very, very filling, but it definitely didn't serve 4-6 people. three of us ate it up pretty quickly.

we made cornbread with it, it was a great meal!
