Heavenly Breakfast Quinoa
What you need:
1/2 small banana
2 teaspoons peanut butter
1/2 cup quinoa, cooked
1 tablespoon flax seeds, ground
few splashes nondairy milk (I use soy)
What you do:
1. Mash the banana right in your breakfast bowl with a fork and then stir in the peanut butter.
2. Stir in the quinoa and flax seeds and then add milk, to taste.
This can be eaten cold or hot. I make up a pot of quinoa at the beginning of the week and I get excited about eating this for breakfast every day. Nothing like a little fiber, protein, whole grain start to a day!

this recipe may not look like much but it is TO DIE FOR. i'm not a huge quinoa fan but i LOVE eating it this way. it's light but hearty, sweet and sooo satisfying. this is definitely my new favorite breakfast.
This is now my favorite breakfast. I am using crunchy peanut butter and almond milk and a bit more quinoa. I like that I make one batch of quinoa and get 4 breakfasts out of it. I love banana's and peanut butter together anyway and with the quinoa and almond milk it turns so creamy and yummy once I heat it up. Totaled up the calories (around 375 for my mix) and was delighted to see that this is really healthy and I stay full for quite a long time.
It's really good but for some reason I get a mustard aftertaste. Maybe it's the age of banana or brand of peanut butter I used.
Did you rinse the quinoa? It has an aftertaste when it's not rinsed.

I liked this. Not my favorite but it was good. I'de have to say the same as Godot. The peanut butter didn't make much sence to my taist buds. And to much protein with the two mixxed together. But I'll try this again with other stuff. ;)

loves it! i made a big pot of this at the begining of the week, as suggested, and it has been the BEST breakfast ever. i used rice milk instead of soy and add dried mixed berries and it really gets me going for the rest of the day. yum!
Very good and filling breakfast. Had it for the first time today. I don’t know about “heavenly” though, but it was still delicious. The peanut butter gave it just the right kick to start my day. Will make again.
Fantastic! Just the sort of satisfying thing I want in the morning. This allowed me to finish up all the quinoa I had in my house (I'm in major cleanup mode.) I might try it with another grain. I have barley and couscous that I'd like to try to finish--I'm leaning toward the couscous.
