Hemp, Flax, Oatmeal, Chocolate Chip Cookies

What you need: 

1 1/2 cups rolled oats
1 1/2 cup barley flour
1 cup vegan chocolate chips
1/2 teaspoon salt
1/4 teaspoon baking soda
1/4 cup flax seeds
1/4 cup hemp seeds
1/2 cup safflower oil
1/2 cup maple syrup
2- 3 tablespoon soy milk or water
2 teaspoon vanilla extract

What you do: 

Line baking sheet with parchment paper or spray with non-stick spray or oil. Heat oven to 350.
In medium bowl mix together oats, flour, choc. chips, salt, baking soda, and flax and hemp seeds. In small bowl mix together the oil, syrup, soymilk or water and vanilla extract. Add liquid mixture to dry mixture and stir only until thoroughly mixed. Let stand for 10 minutes so mixture is easier to spoon. If you don't let it sit it will be harder to keep together because it is a very crumbly mixture. Even after letting it sit it is still a little hard to keep together. Bake at 350 for 18 minutes. let cool on baking sheet for 5 minutes then move to rack to fully cool.
These have a great texture, if you like crunchy cookies. The seeds and oats make it that way. I love making these and don't feel bad about letting my kids eat them because of the added protein and omega-3s the flax and hemp seeds give the cookie. Hope you enjoy.

SO HOW'D IT GO?

:D loved these! I did make a few alterations though.  I didn't have barley flour so i used whole wheat flour...and i only had a cup of flour so i added in more oats.  I also substituted coconut oil for the oil in the recipe.  And lastly I added mashed banana so that the recipe would stick together more.  Oh and i used raw cacao instead of chocolate chips :)...They came out and awesome!  Good healthy recipe!

These are delicious cooked, too.  I used carob instead of chocolate chips.

sounds great and all, but unfortunately eating the batter would be the only way this costly recipe would be beneficial! heating the flax/hemp to 350 damages the omegas! Says so right on the packaging, if you buy your ingredients pre-packaged

I haven't baked them yet, but I think I could just sit here and eat the batter.  I don't know if it'll last the ten minutes it's supposed to sit.  :o
