2 golden potatoes
1/2 a small red onion
5 cloves garlic
1/2 teaspoon thyme
1/2 teaspoon salt
1 teaspoon pepper
olive oil (2 tablespoons or so)
Preheat the oven to 400 degrees Fahrenheit. Bake the potatoes directly on the rack for about 30 minutes. Remove and let cool almost completely.
Chop the onion and mince the garlic and saute it in olive oil over medium-high heat for about 5 minutes.
Chop the potatoes into 1 inch cubes and throw in with the onion and garlic. Add thyme, salt, and pepper and saute for about 10 minutes, or until the potatoes are golden-brown.
These home fries are super-awesome with any tofu scramble!
