Homemade Vanilla Buttercream Cake Frosting

What you need:

1/3 cup vegan butter, softened (I use Earth balance)
4 cups powdered sugar, divided
1/4 cup nondairy milk (I use Soy Dream Original)
1 1/2 teaspoons vanilla extract

What you do:

1. In a big bowl, mix softened butter with an electric mixer until smooth.
2. Add 1 cup sugar, milk, and vanilla, and mix.
3. Slowly begin to add the rest of the sugar until smooth. You can add more milk if you find that it's too hard to spread. It's really good for chocolate cake.

SO HOW'D IT GO?

I love this frosting! It is thick and fluffy. I will definitely use it again. I halved the recipe since I didn't need that much frosting and it still came out great.

This was perfect for the cupcakes and I added less milk to make it extra thick. I also replaced most of the milk with pomegranate and blueberry nectar which gave it it's color. It was really good and it went on so perfectly and still hasn't melted even though they've been sitting on the table for 2 days in this heat lol Definitely keeping this recipe to make more cupcakes with:)

Very good and easy recipe! I was going to make another white frosting for my cake, but I didn't have the ingredients for that one, but I did for this one, and it turned out really well! I added a drop of blue food colouring because of the not nice off-white colour, almost brown, from the vanilla flavouring I used.

This was FABULOUS! Super easy and I had no problems with the consistency; it was thick and creamy. It was a huge hit on a lavender cake I had made. Perfect!

Yes I used Smart Balance light and yes I have access to spectrum vegetable shortening... Thank you for your recommendations... you r a sweet heart <3

i knew it was to blame!!!  i just knew it!  thank you for giving me more of a reason to believe it wasn't just me!

it happened to me too! ug i wanted it for frosted cookies now i just got sugary soup :/

2lbs of powdered sugar fixed it but now i need to make more cookies lol, which wouldn't be a bad thing if i didn't run out of ingredients

This frosting was amazing!!!  I couldn't believe that it turned out so well -- absolutely delicious, easy to make, and easy to spread!

FYI, Smart Balance Organic is vegan (it appears to have the same ingredients as Earth Balance), but it was 30 cents cheaper.  I decided to give it a shot, and I would highly recommend using that product.

i don't know what happened but i had to use 10 cups of powdered sugar for this to have a frosting like consistency... 4 cups was way too watery... i would also suggest putting the thing you frosted into the refrigerator... mine ended up melting overnight even though i put it on cool cupcakes :(

that happens to me anytime i follow a frosting recipe!  what kind of vegan butter do you use?

i'm wondering if maybe smart balance light is to blame?  i recently mastered frosting, but not by following anyone else's recipes.  do you have access to spectrum vegetable shortening?  it's non-hydrogenated and trans fat free, so not gross like crisco.  use that instead of butter + the liquid in the recipe, OR use equal parts of shortening and butter but no other liquid (for more of a buttercreme flavor) and it will turn out nice and fluffy and just like the kinds they make in bakeries.  perfect for decorating.

i hope i could help.

i posted a thing in the forum a month or two ago called "i.mastered.FROSTING!!!!!!!!!!!!!! " talking about my struggles with frosting.  people gave pointers there.  i also included a couple of my own experiments with this new wonderful thing i discovered!
