Incredible This-will-become-your-favorite Veggie Pot Pie

What you need: 

1 frozen (2 layer) vegan pie shell or fresh dough
1 to 2 potatoes, chopped
3 medium carrots, chopped
variety of veggies, chopped (green beans, zucchini, mushrooms, etc.)
2 to 3 cups veggie broth
garlic powder, to taste
cumin, to taste
tarragon, to taste
cornstarch or flour, as needed (I use flour)
nondairy milk, to taste, optional
bouillon cubes, to taste, optional
vegan grated or sliced cheddar to cover pan in 2 layers
1 (10 ounce) package frozen spinach, thawed

What you do: 

1. Thaw pie shell and try really hard to take one of the two shells out of the tin without it breaking into a million pieces. If you manage, you are a god(dess). Cook potatoes, carrots, and variety of vegetables until they about 3/4 cooked. Preheat oven to 400 degrees F.
2. To make sauce, heat broth in large kettle. Add spices (whatever you like to make it savory) and lower heat. Slowly add cornstarch or flour until slightly thickened. You can add nondairy milk and use veggie bouillon cubes here. Add sauce to the cooked veggies and stir to coat.
3. Layer 1/2 cheese on bottom of lower crust. Spoon in veggies and sauce, then add spinach on top. Add rest of cheese on top of that, and close it up as best as you can with the top shell.
4. Bake for about 45 minutes, or until the crust is brown and delicious cheese and juice oozes out.

awesome recipe! I have made this a few times now and i change it around a bit every time. Very simple to make and delicious to vegans and meat eaters alike!

This sounds great and I'm gonna make it tonight!  However, in case you guys don't read ingredients on the stuff you buy, most store bought frozen pie shells have lard in them!  Making pie dough is so easy, so do that and don't eat lard!!

i made this for my mom the other day and it was sooooo good!
i used frozen veggies just because i didnt have time to hit the store.
even my non-vegan dad and sister loved it.
this ones deffinitly worth trying!

Absolutely deeeelish!!! I use steamed broccoli, cauliflower, carrots, potatoes, and frozen peas. I added Quorn brand frozen 'chicken' (cubed) to make it a chicken pot pie. I use Amy's cream of mushroom soup instead of broth, and I didn't use any spices (I think the cream of mushroom soup has enough to make it taste good). So yummy, I've made this several times, each time I make a couple extras to freeze or share. Thank you thank you thank you!

This was a great recipe. I made a simple  whole wheat pie crust since the store I went to only sold pre-made crust with lard.Then I  just added a variety of frozen veggies from my freezer: squash, stir fry mix, and peas. I made one with and one with out the spinach. The one with Spinach was our favorite!  I didn't use cheese and it wasn't missed. This was a big hit. Thanks for a great recipe.

This was really good.  I made my own whole wheat crust, and used the earlier reviewer's suggestion of steaming the veggies (a couple potatoes, 1 huge carrot, 1 stalk celery, some frozen peas, and many mushrooms) in veg broth.  Then I mixed about a cup of Dragonfly's Bulk Uncheese mix in with the veg broth and poured it over top of the veggies in the pie.  I also added some cubed seitan.  Everyone really like it...thanks for the recipe.

This was so yummy. My boyfriend and I used sweet peas, corn and carrots. And in the broth we used rosemary, garlic, ground pepper and thyme. We served it with a side of mashed potatoes. I'm not a vegetarian but my boyfriend is. I was worried about how it was going to compare to chicken pot pie and there wasn't it was just as good! I'm sold, my boyfriend actually had left overs - which he never does, so this is a keeper.
