Irish Whiskey Cake

What you need:

Pan
1/4 to1/2 cup chopped pecans or walnuts (optional) Cake
1-1/3 cups almond milk
2/3 cup oil
1/3 cup Irish whiskey (Jameson works well)
1/3 cup + 2 tablespoons coffee
2-2/3 cups flour
1-1/2 cups sugar
2 teaspoons baking powder
1 tablespoon baking soda Glaze (optional)
1/2 cup brown sugar
1/4 cup Irish whiskey
2 tablespoons vegan margarine
1 teaspoon water Hard Sauce (optional)
1-1/2 cups powered sugar
1/2 cup vegan margarine
2 tablespoons Irish whiskey

What you do:

You can serve this cake plain, with the glaze, with the hard sauce, or both.
1. Preheat oven to 325 degrees F. Spray a bundt pan with cooking spray. Sprinkle nuts, if using, onto bottom of pan.
2. Cake: In a medium bowl combine wet cake ingredients: almond milk, oil, Irish whiskey, and coffee. In a larger bowl combine dry cake ingredients: flour, sugar, baking powder, and baking soda. Make a well in the center of dry ingredients and add wet, mix very well. Pour into prepared pan. Bake for 60 minutes.
3. When done place pan on rack for 10 minutes then remove cake from pan and place on rack. Either proceed to glaze or hard sauce preparation or let cake cool and eat as is.
4. Glaze: Place all glaze ingredients in a small sauce pan over medium-high heat. Bring to a boil and continue boiling for 2 to 3 minutes. Poke still warm cake all over with a skewer or fork. Then slowly pour glaze over cake. Let cool and enjoy or add a dollop or hard sauce and enjoy.
5. Hard Sauce: Cream together sugar and margarine until light and fluffy. Add whiskey and beat until blended. Serve a dollop on each slice of plain cake or glazed cake.

Something is very wrong about this recipe Has anyone really tried it? The whole ttablespoon of baking soda was a disaster! I can't believe no one noticed the most bitter soda taste? Could you have meant a teaspoon instead? I had to throw the whole cake out and that was the only thing wrong with it. Huge expense in nuts. Can anyone comment on this for me? I am so disappointed as I am new on this site, am an excellent baker and frankly afraid to try any more recipes.

This is an awesome cake! Yay! I have a tendancy to make it as a midnight snack for my flattie and I and there's not usually that much left over in the morning. Sooooooo Good and moist and perfectly cakey!
I now use this recipe as a base for all cakes and have found that as long as you keep the dry to wet ingredients ratio the same, you always get perfect cakes or muffins. Whoo!

This cake was awesome. I just used the glaze and it was perfect with a little vanilla ice cream on the side. I think it's time for a second piece.

I made this last night and it was delicious!! I didn't feel like making coffee so I used kahlua instead and it worked just fine. It was moist and cakey but not too sweet.

And it goes extremely well with whiskey  ;)

I'm assuming I have to prepare the coffee because it says its part of the 'wet ingredients'.

FWIW, that was what I did and it worked fine.

Do i have to prepare the coffee --- as in with water --- and then add 1/3 cup of that prepared coffee into the mixture?

Or, is it just a 1/3 of dry coffee into the mix?

I'm assuming I have to prepare the coffee because it says its part of the 'wet ingredients'.

Very nice! I made it with the glaze. Easy to make and quite tasty.
