Italian Bean & Pasta Salad

What you need: 

1 cup dry small shell pasta, cooked and cooled
1 (15-ounce) can mixed beans
1/2 cup green bell peppers, chopped
1/2 cup red bell peppers, chopped
1/4 cup diced red onion [u]Dressing[/u]:
3 tablespoons lemon juice
3 tablespoons olive oil
1-1/2 teaspoons dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper

What you do: 

1. Place pasta in a large bowl. Add beans, green bell pepper, red bell pepper, and onion.
2. Dressing: In a jar with a tight fitting lid, combine dressing ingredients (lemon juice, olive oil, oregano, salt, and pepper). Shake well to blend.
3. Pour dressing over salad and toss.
4. Cover and chill 1 hour or overnight.

SO HOW'D IT GO?

This was not bad. I warmed this up in the microwave and it was alright. Next time, I might add a touch more dressing and maybe broccoli. Otherwise, I would rate this 3.75/5.

this was very good, and very easy to make. I made it two days in a row.  :P

I didn't have peppers so I used collard greens.  It was so good!

This recipe was exactly what I was looking for when I searched for a bean and pasta salad. The only adjustments made were bow tie pasta instead of shell, I used a bean mixture of kidney, black-eyed peas and black beans, and used green and orange bell peppers because I am not so fond of red. The result was very delicious and colorful, perfect for spring/summer.
