Italian-Style Sausage Sandwich

What you need: 

1 Italian-style roll, split on top and toasted
1 sausage with Italian seasoning, thaw/heat if frozen
ketchup
1/2 bell pepper, sliced into strips
onion to taste, also sliced into strips
salt and pepper
olive oil
vegan soy cheese

What you do: 

Heat oil in a nonstick frying pan, add onions, and cook over medium heat, stirring frequently, until softened and starting to caramelize a bit. Add peppers and cook until they are softened. Put in the sausage, letting it sear a bit, then add liberal amounts of ketchup, salt, and pepper, stirring lots to avoid sticking (you can add a little water or turn down the heat if necessary). Keep cooking until ketchup thickens into a tasty sauce, then mound the whole mess in the middle of the pan and put a slice of cheese on top. After the cheese has melted, scoop sausage, veggies, and cheese into the bun and enjoy! :o)
Note: If you can't find vegan Italian-style sausages, or if you just want a really zippy sandwich, add some hot sauce/oregano/fennel seeds/basil/whatever Italian seasonings strike your fancy to the sauce. My carnivorous family loves this one.

No offense, but... ketchup?  :P

Sorry, but "ketchup" and "Italian-Style" don't belong within a hundred miles of each another. Being Italian, and a foodie, I'll have to second the comment of another member who suggested using tomato sauce instead.

I tried this recipe (wtih a few alterations, of course) and it was delicious!  I had sausage in a tube (err, I don't remember the brand name) sitting around, and this was a great excuse to use it.  I added mushrooms and omitted ketchup (not a huge fan).  I was going to throw some tomato sauce in at the end, but I liked the way it turned out without it (almost philly cheese steak with sausage).  really great recipe, thanks for helping me use up some sausage!
